Best haul ever

Turns out you only need a pandemic to make you spend a lot of time at home to suddenly become a master gardener. This year, I spent a lot more time reading and researching the various crops and I suddenly was able to grow one of my favorite vegetables: Water Spinach.

The key to water spinach is swampy, soggy soil. After looking at my self watering boxes this year which I mostly had strawberries in and seeing them all do poorly because they were all too waterlogged, I had the epiphany that this would be perfect for water spinach.

I wanted to plant more but couldn't find more seeds and then I watched some YouTube videos and realized they are self propagating. I then replanted into another box:
